1 package (12-ounce/340 g) fresh or frozen cranberries
4 tablespoons (60 mL) balsamic vinegar
3 tablespoons ( 45 mL) port wine, or a not-too-dry red wine
1 tablespoon (15 mL) olive oil
4 thumb-size slices goat cheese (cut vertically 1/2 to 3/4 inch/1 cm thick)
1 handful of mixed greens
Black pepper, to taste
Prepare cranberries according to package directions. Preheat oven broiler.
Pour vinegar and wine into a pan and warm over low heat for about 5 minutes.
In a separate pan, heat oil; add goat cheese slices and shake to coat cheese with oil, about 1 minute. Immediately remove pan to broiler to lightly brown surface of cheese. Remove and let rest for 2 to 3 minutes.
Divide greens and cranberries equally among four plates; place a slice of cheese on top of the warm cranberries. Drizzle dressing over top; add a twist of black pepper. Makes 4 servings.
