Steamed New Potatoes

Ingredients

18-20 new baby potatoes, washed and cut in half
18-20 baby purple or red potatoes, washed and cut in half
1/3 bunch     fresh chives, washed and finely sliced *
1/2 bunch     fresh parsley leaves, washed, dried and chopped *
Sea salt and pepper as needed
2 tablespoons (30 mL)     extra virgin olive oil *
 

Directions

Put about 1 inch (2.5 cm) of water in the bottom of a pot and add a pinch of sea salt.  Set a steamer basket in the pot, cover with a lid and bring to a boil over high heat.  Once the steam is well underway, carefully remove the lid, add the potatoes to the steamer basket, cover with the lid again and steam until the potatoes are tender.  That means a knife will easily slide into the potatoes, but they're not so overcooked that they're falling apart (10 minutes).
   
Quickly and carefully lift the steamer basket out of the pot, transfer the potatoes to a bowl, season with the olive oil, sea salt and pepper while still warm, then gently mix. Sprinkle with the parsley and chives and serve immediately.
