
Shortbread Base
Ingredients
Makes three 8x8 pans of squares
3 cups (750 mL) all-purpose flour
1½ tsp (7 mL) baking powder
½ tsp (2 mL) salt
¾ cup (175 mL) sugar
1½ cup (375 mL) butter, softened
Directions
Place flour, baking powder, salt, and sugar into a bowl, add butter and mix until well blended, using your hands if necessary. Line three 8x8 pans with parchment paper, leaving an overhang on both ends to make removing the squares easier.
Divide dough between the three pans and use your hands to spread and compress. The dough needs to be firmly pressed so that you do not end up with a crumbly base. Place into preheated 350°F (180°C) oven and bake for 12-15 minutes or just until the edges are beginning to brown.
