Ingredients

1 medium red onion, sliced thinly
½ cup (125 mL) white vinegar
½ cup (125 mL) water
1 bay leaf
1 tsp (5 mL) pickling spices

Directions

Place the onions in a 500-mL mason jar. In a small pot bring the rest of the ingredients to a boil then pour on the onions, let cool, then refrigerate for one hour before serving.
