
Mini Meat Loaf Cakes with Gravy Topped with Apple Potato Balls
Ingredients
Meat Loaf
2 egg yolks
1 pound (1/2 kg) apple sausage
2 pounds (1 kg) ground sirloin
1 cup (250 mL) bread crumbs
1 onion, finely shredded
2 tablespoons (30 mL) soy sauce
2 teaspoon (10 mL) dried sage
1/2 teaspoon (2 mL) dry garlic
1 teaspoon (5 mL) salt
Apple Potato Balls
mashed potatoes
1/2 red medium-sized apple (peel on) per person, chopped
butter
pinch of brown sugar
Directions
Meat Loaf
Mix ingredients together and place in non-stick muffin pans. Bake at 350°F for about 45 minutes.
Apple Potato Balls
To your regular mashed potato recipe, you will add about 1/2 red medium-sized apple (peel on) per person, chopped and sauteed in butter and a good pinch of brown sugar until slightly soft. Add this to your warm mashed potatoes and, using an ice cream scoop, place a potato ball on top of plated meat loaf. Pool hot brown gravy around perimeter of plate for an upscale look. Serve with buttered green beans and apple slices.
