Ingredients

3 lbs (1.3 kg) Annabelle or other yellow-fleshed potatoes, halved and boiled
½ cup (125 mL) cooked diced double-smoked bacon
½ cup (125 mL) mayonnaise
½ cup (125 mL) sour cream
¼ cup (50 mL) sliced green onions
10 chives, chopped
½ cup (125 mL) shredded cheddar cheese
juice of ½ lemon
½ tsp (2 mL) sea salt
½ tsp (2 mL) ground pepper

Directions

Cool potatoes; cut into 1-inch (2.5-cm) cubes. Place in a large bowl, add remaining ingredients and toss lightly. Refrigerate until ready to serve.
