
Hot Spinach Salad with Pork Strips
Ingredients
2 tbsp (30 mL) vegetable or olive oil
1/2 cup (125 mL) chopped onion or scallions
6 strips of pork (buy stir-fry strips, or cut from pork chop)
3 cups (750 mL) fresh spinach
1/4 cup (50 mL) pine nuts
1 sweet red pepper, chopped
Salt & pepper to taste
Feta or parmesan cheese for garnish
Directions
Heat oil in frying pan; add onion and pork, and stir-fry until pork is cooked.
Add spinach, pine nuts and red pepper; stir-fry until the spinach is wilted and the pepper is heated through. Add salt and pepper.
Garnish with crumbled feta cheese or parmesan. Makes 2 servings.
