In a large bowl, add cream cheese, spinach, green onions, garlic, Dijon mustard, sour cream, parsley and lemon juice; mix until combined. Add lobster, salt and pepper, and parmesan cheese; mix well to incorporate the lobster. In a baking dish, spread mixture evenly and mash with a fork to ensure there are no lumps.
Bake at 350°F (180°C), until the dip starts to bubble on the sides and cheese is browned, about 20 minutes.
Serve with flat breads, tortilla chips or even vegetables.
