
Cilantro and Mexican Spiced Guacamole and Cheddar Stacks
Ingredients
1 skinned turkey breast
puréed chipolte peppers or chili powder
salt and pepper
garlic powder
1 cup (250 mL) chopped cilantro
homemade or store-bought guacamole
shredded old cheddar
lime wedges
diced tomatoes
shredded lettuce
6-inch (15-cm) round taco shells
Directions
Rub the skinned turkey breast with puréed chipolte peppers or chili powder, salt, pepper and garlic powder. Pat finely 1 cup (250mL) chopped cilantro on top to form a crust. Bake and let cool before slicing.
Spread guacamole on top of rounds and garnish with the cheese, tomatoes and lettuce. Drizzle with lime juice for a lunch full of bright flavours.
