Ingredients

Salad
  • 1 head cauliflower, thinly sliced
  • 1 Honeycrisp or Jonagold apple, thinly sliced
  • 1 stick celery, thinly sliced
  • 1/2 cup (125 mL) raisins or dried cranberries
  • 1/2 cup (125 mL) crumbled Urban Blue cheese
  • 1/4 cup (50 mL) toasted walnuts
Dressing
  • 1/3 cup (75 mL) apple cider vinegar
  • 1/3 cup (75 mL) sour cream
  • 1/4 cup (50 mL) honey
  • 1/2 cup (125 mL) crumbled Urban Blue cheese
  • 2 tsp (10 mL) Dijon mustard
  • 1 tsp (5 mL) Sriracha sauce
  • ½ cup (125 mL) canola oil
  • Salt and pepper to taste

Directions

Salad
In a salad bowl, combine all ingredients, add salad dressing and mix.

Dressing:
In a blender (or with a hand blender), combine all ingredients and blitz until smooth.
