Maplecure highlights gourmet flavours

Eric and Sylvain Caron are a pair of very sweet brothers from Saint-Joseph-de-Madawaska, New Brunswick. Both are professional foresters and maple syrup producers; working together, they created Sylvacer Inc., the parent company of Maplecure.

The pair has set out on a mission to highlight the positive effects that using maple syrup regularly in your diet can have on your health. Replacing refined sugar with maple syrup has positive effects on the human body. Because maple syrup is a natural sugar, the body recognizes it and is able to break it down more readily.

In addition to their traditional maple syrups, which come from the approximate 80,000 trees that produce between 700 and 900 barrels of syrup annually, they have developed a beautiful line of infused syrups.

One of the most interesting new offerings they have developed is their maple syrup infused with chaga. Chaga is a dark, woody fungus that can be found growing on birch trees all around Atlantic Canada, and has been used medicinally for centuries; it can help reduce inflammation, relieve pain and is a natural immunity booster. The chaga tends to darken the syrup slightly and if you are used to the taste of chaga you will definitely pick up the woody undertones.

Another personal favourite is their coffee infused maple; we have been using this to make granola and have been enjoying it immensely, and the coffee flavour is delightfully subtle but noticeable. Other new flavours include bacon, chocolate and chai-infused syrups, each of which invites great creativity in your kitchen!

I would be remiss if I didn’t mention one of their newest offerings—a maple syrup infused with our own The Kilted Chef “Hot under the Kilt Acadian Cajun” seasoning.
