Beef and Chickpea Stew

Heart-warming fusion stew

As we move from fall into winter, our desire for bone sticking, heart warming foods increases. Now I love a good stew, and I love it in all its forms, from Julia Child’s Bœuf Bourguignon to my mother’s boiled dinner. Today’s stew draws inspiration from the Anglo-Indian Madras Curry, and pairs it with the goodness of Irish meat and potatoes, so it will go nicely with a stout, or a crisp lager.
