Saltscapes Road Trip Day 7
Friday dawned sunny on the St John River (and thanks to the pups we saw the sunrise).
Following a Fredericton breakfast meeting, we headed south towards Murray Beach Provincial Park in sight of the Confederation Bridge to PEI.
Today was a veggie shopping day in preparation for creating a wedding salad for about 120 guests. We were very impressed with the NB roadside stands - especially the Green Pig Country Market at the Salisbury Big Stop exit (Great JOB to local farmer Rod Beckwith - thoughtfully selected local stuff including bakery, produce and crafts).
Local ingredients for the wedding salad consisted of:
farm fresh Romaine lettuce
Green and Yellow beans
Cucumber
Red onion
Green onion
Peppers
Mushrooms
Herbs
Tomatoes
Carrots
The planned do-it-yourself wedding by friends at their organic farm was to be a tribute to family and community and, after a solid week of rain, the forecast called for for perfect skies.
