
The Keddys' Barbecued Sweet Potatoes

Ingredients
4 sweet potatoesolive oil
2 cloves garlic, minced
salt and pepper to taste
4 tsp (20 mL) sour cream
2 green onions, sliced
Directions
Wash potatoes and thinly slice, width wise, cutting ¾ of the way through. Drizzle with olive oil and garlic, and add salt and pepper to taste. Wrap in aluminum foil and place on a barbecue heated to medium high; cook until soft, about 30 to 40 minutes. Top with sour cream and chopped green onions. Super tasty and an easy side dish.
