Ingredients

40 oz (1.2 L) dark rum
ΒΌ cup (60 mL) whole cloves
4 cinnamon sticks
2 whole nutmegs
3 whole oranges, or 2 cups (475 mL) whole cranberries
unpasteurized honey, to taste

Directions

Makes 1 Litre

In a large pot, over medium-high heat, bring mixture to a boil. Simmer to reduce to 1/3. Cool and rest mixture for one day. Strain out the solids. For sweetener, add unpasteurized honey. In sterilized bottles, place a small piece of cinnamon, a couple whole cloves and a curl of orange peel. To serve, add to a mug of boiling water. Add a shot of rum, if you like. Or mix with hot orange, apple or cranberry juice, or add to a cup of tea.
