
Beef Perogies
Ingredients
2 tbsp (30 mL) butter1 large onion, diced
8 oz (250 g) cooked beef (brisket, prime rib or any tender cut), diced
1 cup (250 mL) button mushrooms, sliced
Salt and pepper
Directions
In a pan, melt butter and sauté onions and beef until the onions are golden brown. In a separate pan, sauté sliced mushrooms, seasoned with salt and pepper to taste.
Once the onions, mushrooms and beef are cooked, mix together and dice, either with a knife, in a grinder or pulsed in a food processor.
Set aside and let cool. Makes 1 ¼ cup (300 mL).
